Peanut Butter Vanilla Quick Bread

This peanut butter vanilla quick bread is great for both snacks and for breakfast. It’s got a lot of wonderful peanut butter flavor, but it’s the triple dose of vanilla that really makes it shine. Slices are delicious enough all on their own, but would also be great with a spoonful of jam or honey spread on top.

Ingredients

For the Bread 

2 cups all-purpose flour 

1/2 cup Peanut Butter & Co. Vanilla Peanut Powder 

2 tsp baking powder 

1/2 tsp salt 

1/2 cup granulated sugar 

1/2 cup light or dark brown sugar 

1/4 cup vegetable oil 

1 large egg 

1 tbsp vanilla extract 

1 cup whole milk 



For the Vanilla Icing 

1 cup powdered sugar, sifted 

1 tsp vanilla extract 

1-2 tbsp milk or heavy cream 

Directions

  1. Preheat oven to 350°F. Grease a 9 x 5-inch loaf pan with non-stick cooking spray.  

  2. In a large bowl, combine the flour, powdered peanut butter, baking powder, salt, sugar, and brown sugar. In a separate bowl, whisk together the vegetable oil, egg, vanilla extract, and milk. Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain. 

  3. Pour batter into the prepared loaf pan and bake until a toothpick inserted into the center comes out with a few moist crumbs, about 50 minutes. Let cool in the pan 15 minutes, then transfer to a wire rack to cool completely.

  4. To make the icing, whisk together the powdered sugar, vanilla extract and enough milk or heavy cream to make a slightly thick but pourable consistency. Drizzle over cooled bread. Let sit 15 minutes before serving.
