Peanut Butter & Co. Simply Smooth

1/2 cup honey

2 tablespoons coconut oil

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 cup dried cranberries

3 1/4 cups old-fashioned oats

1/2 cup semisweet white-chocolate chips


  1. Stir the Peanut Butter & Co. Simply Smooth, honey, and coconut oil together in a saucepan. Cook over medium heat, stir until the mixture reaches a simmer. Simmer for 1 minute while stirring so the bottom does not burn. Remove from the heat.

  2. Stir in the vanilla & salt. Then stir in the oats and cranberries until completely combined.

  3. If you would like the chocolate chips not to melt, transfer the granola to the refrigerator for 15 minutes. Stir in the chocolate chips until combined.

  4. Roll the mixture into balls and set them on a baking sheet covered with parchment paper.

  5. Refrigerate the granola balls for about an hour until they are chilled. Enjoy!
