Peanut Butter Granola Bars

You’ll need:
3/4 cup Peanut Butter & Co. Simply Smooth
1/2 cup honey
2 tbsp coconut oil
1 tsp vanilla extract
1/2 tsp salt
1 cup chopped peanuts
Toppings: raisins, shredded coconut


Directions:
Line an 8x8 inch square baking pan with parchment paper and set aside. In a medium saucepan, stir together Peanut Butter & Co. Simply Smooth, honey, and coconut oil. Cook over medium heat, stirring often, and allow to simmer for one minute. Remove from the heat and stir in vanilla, salt, Bob's Red Mill Honey Oat Granola, and chopped peanuts and stir until completely combined. Using a square of parchment paper to avoid sticking, firmly press the mixture evenly into the pan. Sprinkle shredded coconut and raisins over mixture and press them down so that they adhere. Cover and refrigerate for at least one hour. Lift the parchment paper to remove the sheet of bars from the pan and place on a cutting board. Cut into 12 long bars.
