Peanut Butter Chocolate Chip Cookie Sandwiches
The best part about this recipe is that it can be as simple or complex as you’d like it to be. For a completely homemade cookie sandwich, use the recipe below to make Peanut Butter Chocolate Chip Cookies (pictured here) – or skip turning on the oven and opt for store-bought cookies of your choice. Sandwich two cookies together with this fluffy, creamy Peanut Butter Cookie Sandwich Filling and roll in rainbow sprinkles for some extra flair.
For Peanut Butter Chocolate Chip Cookies:
2 and 1/4 cup all-purpose flour
1 tsp baking soda
¾ tsp salt
1 cup (2 sticks) unsalted butter, softened to room temperature
¾ cup light brown sugar
¾ cup granulated sugar
2 large eggs
2 tsp pure vanilla extract
1 ¾ cup chocolate chips
For Peanut Butter Cookie Sandwich Filling:
½ cup Confectioners’ Sugar
Preheat oven to 350˚ F and line cookie sheets with parchment paper. Whisk together flour, baking soda, and salt and set aside.
In a mixer bowl fitted with the paddle attachment, beat butter and Peanut Butter & Co. Smooth Operator on medium speed until creamy. Add brown sugar and granulated sugar and beat on medium speed for about three minutes or until fluffy. Beat in the eggs, one at a time. Add vanilla extract. Slowly add flour mixture and stir until just combined. Do not over mix!
Remove mixer bowl from stand and use a spatula to fold in chocolate chips. Cover dough and refrigerate for one hour or until firm. Once chilled, roll dough into tablespoon sized balls and place on cookie sheets. Bake for about ten minutes, until cookies just begin to brown at the edges. If the cookies appear undercooked, that’s okay! If they are puffy, gently press them down using a spatula while still warm. Allow for cookies to cool for 10 minutes and transfer to cooling rack. Make sure cookies are completely cooled before making sandwiches.
For Peanut Butter Cookie Sandwich Filling: Combine peanut butter and confectioners’ sugar in a stand mixer or using a hand mixer.
To make sandwiches: When cookies are completely cooled, scoop approximately one tablespoon of filling onto the flat side of a cookie. Place another cookie flat side down on top. Repeat this process until you have 21 cookie sandwiches.
