Grilled Chicken Skewers with Peanut Sauce


You'll Need:

1 1/2 lbs. chicken breast, grilled, skinless, boneless, cubed

For the Marinade:

1 Tbsp sesame oil
1 Tbsp honey
2 Tbsp soy sauce
1 Tbsp minced garlic
2 tsp ginger root, grated 

For the Peanut Sauce:
2 Tbsp fresh lime juice
1/2 Tbsp honey
2 Tbsp liquid aminos
1/2 cup Peanut Butter & Co Original Peanut Powder
1/4 cup water + 2 Tbsp 

For the Garnish (optional):
1 Tbsp cilantro, chopped
2 Tbsp peanuts, chopped 


For the Peanut Sauce:
Add all ingredients to a small bowl & whisk until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover and refrigerate until ready to serve.

For the Skewers:
Whisk together soy sauce, sesame oil, honey, vinegar, garlic and minced ginger. Place chicken cubes in marinade, cover, refrigerate, and let sit overnight or at least 4-6 hours.

Thread skewers with marinated chicken cubes and refrigerate while heating the remaining marinade. Pour the remaining marinade into a small sauce pan, bring to a boil, reduce heat and simmer until thickened.

Lightly oil grates of grill, grill pan, or skillet with cooking spray, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.

Serve with peanut sauce & garnish with cilantro & chopped peanuts if desired.

Freeze time: 6-8 minutes
