Dark Chocolatey Dreams Lace Sandwich Cookies
For the cookies
2/3 cup packed light-brown sugar
1/2 cup unsalted butter
1/2 cup light corn syrup
Pinch of salt
1 cup pecans finely chopped
2/3 cup all-purpose flour
For the filling
Approx. 1/4 cup Peanut Butter & Co. Dark Chocolatey Dreams
Preheat the oven to 350˚F. Line baking sheet with parchment or a silicone baking mat.
In a medium saucepan, over medium heat cook sugar, butter, corn syrup, and salt, stirring until sugar has dissolved and butter has melted, about 7 minutes.
Remove from heat and fold in pecans and flour. Transfer to a medium bowl, cover with plastic and refrigerate until firm, about 2 hours.
Using a teaspoon measure, roll dough into small balls. Place on the prepared baking sheet, about 2 inches apart. Bake for about 9 to 10 minutes, until cookies are a golden brown. Transfer cookies on parchment to a wire rack to cool completely.
When cookies are fully cooled, spread a layer of Peanut Butter & Co. Dark Chocolatey Dreams onto half of the cookies. Place the plain cookies on top, creating sandwiches. Enjoy!
