Cinnamon Raisin Apple Crisp Parfait

2 16 ounce mason jars

Ingredients

4 tbsp Peanut Butter & Co. Cinnamon Raisin Swirl

2 cups Nancy's Oatmilk Non-Dairy Vanilla Yogurt

3 medium sized apples, chopped

1 tbsp granulated sugar

1 tsp ground cinnamon, divided

1/2 tsp lemon juice

1/2 cup brown sugar

2/3 cup old fashioned oats

2/3 cup all-purpose flour

1/4 cup cold unsalted butter or butter substitute, diced into small cubes

pinch of salt

Directions

  1. Preheat oven to 350 F degrees.  Grease a small (approx. 6x2 in.) baking dish and set aside.

    In a medium sized bowl, combine chopped apples, granulated sugar, 1/2 tsp cinnamon, and lemon juice. Stir to combine, then transfer to prepared baking dish.

  2. In a separate mixing bowl, add mix brown sugar, oats, flour, 1/2 tsp cinnamon, salt, and diced cold butter.  Use a pastry cutter to cut the butter into the oat mixture until the mixture resembles pea-sized crumbs.

  3. Spread the oat mixture over apples in baking dish, and gently pat to even it out.  Bake 40-50 minutes, until golden brown and bubbly. Allow to cool completely.

  4. Scoop 1/4 of the apple crisp into the 2 16 ounce mason jars.

  5. Scoop 1 cup of yogurt into each jar, on top of apple crisp.

  6. Add 2 tbsp to each jar, on top of the yogurt.

  7. Top each jar with half of the remaining apple crisp. Enjoy!
