VIDEO RECIPE: White Chocolate Peanut Butter Bread Pudding

This amazing dessert is packed with the delicious flavor of white chocolate from both white chocolate chips and Peanut Butter & Co White Chocolate Wonderful. Even those without a sweet tooth will gobble up this fantastic creation!

Ingredients

For the pudding 
1 pound loaf day-old brioche, cut into 1” cubes 
2 cups heavy cream 
2 cups whole milk 
1/2 cup (1 stick) butter, melted + more for greasing pan 
4 large eggs 
1/2 cup Peanut Butter & Co White Chocolate Wonderful, warmed slightly 
1 cup granulated sugar 
1 tbsp vanilla extract 
1 tsp kosher salt 
cup white chocolate chips 


For the garnish 
1/2 cup White Chocolate Wonderful, warmed  
Whipped cream, for serving 

Directions

  1. Preheat oven to 300° F. Butter an 8 x 12-inch ceramic or glass baking dish and set aside.

  2. In a very large bowl, whisk together cream, milk, melted butter, eggs, peanut butter, sugar, vanilla, and salt until smooth. Add the bread and toss to coat. Let soak 30 minutes, tossing occasionally, until fully soaked. 

  3. Stir in white chocolate chips, then spread into the prepared baking pan along with any remaining liquid.

  4. Cover with foil, and bake 40 minutes, then remove foil and bake an additional 20-30 minutes, or until pudding is set, slightly puffed and golden on top. Let cool 30 minutes, then warm remaining 1/2 cup peanut butter and drizzle on top. Serve warm or room temperature with whipped cream on the side.
