Peanut Butter Sandwich Cookies

Ingredients
For the ganache
3/4 cup heavy cream
4 ounces chopped bittersweet chocolate
1/4 cup Peanut Butter & Co. Dark Chocolatey Dreams
Pinch of salt
For the cookies
4 tablespoons unsalted butter, softened
1/2 cup sugar
1 cup Peanut Butter & Co. Smooth Operator
1/2 cup plus 2 tablespoons granulated sugar
1 cup all-purpose flour, spooned and leveled
Directions
Make the ganache: Bring heavy cream, Peanut Butter & Co. Dark Chocolatey Dreams, and salt to a boil in a medium saucepan over medium heat.
Place chocolate in a heat-proof bowl and pour cream mixture over it.
Set aside to cool slightly, about 3 minutes; stir to melt chocolate.
Transfer ganache, uncovered, to the refrigerator to chill completely for about an hour.
Make the cookies: Preheat oven to 350°F.
In a medium bowl, stir together butter, sugar, and Peanut Butter & Co. Smooth Operator.
Stir in flour to create a dough.
Portion dough into 1/2-tablespoon amounts and transfer to a parchment-lined baking sheet about 2 inches apart.
Use a glass dipped in sugar to press cookies to about 1/4-inch thick (and about 2 inches in diameter).
Bake cookies for 12 minutes or until golden around the edges. Transfer to a wire rack to cool completely.
Make the sandwiches: Spoon about 1 teaspoon cooled ganache onto the underside of one cool cookie; sandwich with another cookie. Repeat with remaining ganache and cookies.
