VIDEO RECIPE: Peanut Butter Meatloaf with Chile Seasoning
Our version of the family dinner classic adds Crunch Time peanut butter for an extra dose of protein and great texture! A suite of spices also helps this meatloaf stand out from the rest. This dish is super easy to prepare and the leftovers are just as delicious the next day!

Ingredients
2 pounds ground beef
4 slices wheat sandwich bread, cut into cubes
3/4 cup Peanut Butter & Co Crunch Time
1/2 cup whole milk
2 large eggs
2 garlic cloves, finely minced
2 tsp. ground oregano
1 tsp. ground cumin
1 tsp. ancho chili powder
1/4 tsp. ground cayenne
2 tsp. smoked sweet Spanish paprika
1 tsp. kosher salt
1 tsp. ground black pepper
For the topping
1/2 cup ketchup
1/4 tsp. ground cayenne
1 tsp. smoked sweet Spanish paprika
Directions
Preheat oven to 350°F. In a large bowl, combine the bread, Peanut Butter & Co Crunch Time, milk, and eggs, tossing to coat. Let soak 10 minutes.
Add the ground beef, garlic, and all the spices to the bread mixture and mix until evenly combined.
Scoop the mixture into the center of a large baking sheet and mold into a loaf.
Whisk together the ketchup with the cayenne and paprika, and brush onto the top and sides of the loaf.
Bake for 50 minutes to an hour, or until cooked through. Let stand 15 minutes before slicing and serving.
