Peanut butter simple syrup
1 cup granulated white sugar
1 cup water
Pinch kosher salt
For the cocktail
4 ounces (1/2 cup) vodka
2 ounces (1/4 cup) peanut butter simple syrup
Make the peanut butter simple syrup: Combine the sugar and water in a saucepan and bring to a simmer for about 5 minutes, letting it reduce slightly. Stir in the peanut butter and salt, and whisk continuously for about 3-5 more minutes until smooth, syrupy, and thick. Remove from heat and let cool completely. (Can be prepared days in advance. Store in fridge.)
Combine vodka, simple syrup, and ice in a shaker and mix until shaker is frosted. Divide into 2 martini glasses.
