VIDEO RECIPE: Peanut Butter Madeleines

Peanut butter adds an American twist to this classic French pastry. Instead of the more traditional ground almonds, peanut butter is added to the batter which give these madeleines a subtle yet distinctive nutty taste. Madeleines are at the intersection of cakes and cookies, so they’re sure to make fans of both happy!

Ingredients

Baking spray, with flour and oil 

1 cup all-purpose flour 

1 tsp. baking powder 

2 large eggs 

3/4 cup sugar 

1 stick unsalted butter, melted 

1/4 cup Peanut Butter & Co Smooth Operator

1/2 tsp. pure vanilla extract 


Powdered sugar, for dusting 

Directions

  1. Preheat oven to 375° F. Spray 2 madeleine pans with baking spray, or brush with butter and dust with flour. Stir together butter, Peanut Butter & Co Smooth Operator, and vanilla extract. 

  2. Whisk together flour and baking powder in a small bowl. Whisk together eggs and sugar until combined. Stir in flour until incorporated, then whisk in peanut butter mixture. Divide batter among prepared tins using a level tablespoon measure. Bake 13 to 15 minutes or until madeleines are puffed and golden. Cool 5 minutes in pan set on wire rack, then gently remove to cool completely. Dust madeleines with powdered sugar before serving.
