Supplies
Electric Mixer
Ingredients
1 (16-ounce) jar Peanut Butter & Co. Smooth Operator
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 cups packed light-brown sugar
1 large egg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
Directions
Preheat oven to 375°F. In the bowl of an electric mixer, combine Peanut Butter & Co. Smooth Operator, butter, and sugar. Beat mixture on medium speed until light and fluffy. Stir in egg until incorporated. With the mixer on low speed, stir in flour and baking powder.
Drop dough in 1-tablespoon portions onto parchment-lined baking sheets (about an inch apart). Use the tines of a fork to flatten cookies, making a crosshatch pattern. Bake cookies for 12 to 14 minutes or until golden around edges. Transfer to a wire rack to cool completely.
