VIDEO RECIPE: Cold Peanut Butter Sesame Noodles

Ingredients

1/2 cup Peanut Butter & Co Smooth Operator 

1 cup water 

3 tbsp. low sodium soy sauce 

3 tbsp. rice vinegar 

2 tsp. honey 

1/4 cup sesame oil 

1 2-inch piece garlic, peeled 

3 garlic cloves 

1/2 tsp. red pepper flakes 

1 pound dried thin spaghetti, cooked according to package directions, rinsed and cooled 

1 red bell pepper, thinly sliced 

1 orange or yellow bell pepper, thinly sliced 

2 scallions, sliced (green parts only) 

1/4 cup fresh cilantro 


1/4 cup chopped roasted salted peanuts, for garnish 

Directions

  1. Combine Peanut Butter & Co Smooth Operator, water, soy sauce, vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes in a blender and puree until smooth. 

  2. Toss dressing with pasta until coated. 

  3. Add sliced peppers, scallions, and cilantro and toss again. Serve cold topped with chopped peanuts.
