VIDEO RECIPE: Cold Peanut Butter Sesame Noodles

Smooth Operator peanut butter serves as the base of the sauce for these cold sesame noodles, giving the dish that peanutty flavor so popular in Asian cuisine. Make this recipe for dinner and bring the leftovers for lunch!

Yield: 4 servings

Ingredients

1/2 cup Smooth Operator peanut butter
1 cup water
3 tablespoons low sodium soy sauce
3 tablespoons rice vinegar
2 teaspoons honey
1/4 cup sesame oil
1 2-inch piece garlic, peeled
3 garlic cloves
1/2 teaspoon red pepper flakes
1 pound dried thin spaghetti, cooked according to package directions, rinsed and cooled
1 red bell pepper, thinly sliced
1 orange or yellow bell pepper, thinly sliced
2 scallions, sliced (green parts only)
1/4 cup fresh cilantro

1/4 cup chopped roasted salted peanuts, for garnish

Procedure

1. Combine peanut butter, water, soy sauce, vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes in a blender and puree until smooth.

2. Toss dressing with pasta until coated.

3. Add sliced peppers, scallions, and cilantro and toss again. Serve cold topped with chopped peanuts.
