Valentine's Day Peanut Butter Truffles
1/4 cup butter
1/4 cup honey
2 cups Peanut Butter & Co. Dark Chocolatey Dreams
or Peanut Butter & Co. Smooth Operator
1 1/4 cups confectioners' sugar
1 teaspoon vanilla extract
Crushed peanuts, cute pink heart-shaped sprinkles, and mini chocolate chips for decoration
Line an 8x8 inch square pan with parchment paper. In a small bowl, combine honey and butter. Microwave in 10-second increments until melted.
Add room temperature Peanut Butter & Co. Dark Chocolatey Dreams or Peanut Butter & Co. Smooth Operator to the bowl and mix until smooth. Stir in confectioners' sugar and vanilla and mix until well combined. Spread mixture into the prepared pan. Refrigerate, covered, 2 hours or overnight for best results.
Place toppings in shallow bowls. When the candy is thoroughly chilled, use the parchment paper to lift the candy out of the pan. Cut the candy into 64 squares. Shape each square into a ball by rolling in your hands. Roll each ball in desired toppings.
Place truffles in an airtight container between layers of parchment paper, or place each ball in a miniature fluted baking cup, and store in the refrigerator until ready to eat.Prep time: 20 minutes, plus 2 hours for chilling
