The Bee’s Knees Special

Yield: 2 sandwiches
2 tablespoons The Bee’s Knees peanut butter
8 tablespoons apple juice
4 teaspoons water
1/2 cup jicama, thinly sliced
1/2 cup apple, thinly sliced
dash of salt
2 grilled boneless, skinless chicken breasts, cut into slices
4 slices of sourdough bread, toasted
handful of spinach
1. To make slaw: Combine The Bee’s Knees peanut butter, apple juice, water and salt. Whisk together. In a medium bowl, combine jicama and apple. Pour half of peanut butter dressing over top, stir to combine.
2. To assemble your sandwich, start with a slice of sourdough, coat with peanut butter dressing. Top with spinach, chicken breast, slaw, and bread.
Note: you will most likely have some slaw left over, enjoy it on the side!
