2 tbsp Peanut Butter & Co. The Bee's Knees  

1/2 cup apple juice 

1 tbsp water 

1/2 cup jicama, thinly sliced 

1/2 cup apple, thinly sliced 

Dash of salt  

2 grilled boneless, skinless chicken breasts, cut into slices 

4 slices of sourdough bread, toasted 

Handful of spinach


  1. Combine Peanut Butter & Co. Bee’s Knees, apple juice, water, and salt. Whisk together. In a medium bowl, combine jicama and apple.

  2. Pour half of peanut butter dressing over top, stir to combine. To assemble your sandwich, start with a slice of sourdough, coat with peanut butter dressing.  

  3. Top with spinach, chicken breast, slaw, and bread.
