The Bee’s Knees Special
You'll Need:
2 tbsp Peanut Butter & Co. The Bee's Knees
1/2 cup apple juice
1 tbsp water
1/2 cup jicama, thinly sliced
1/2 cup apple, thinly sliced
Dash of salt
2 grilled boneless, skinless chicken breasts, cut into slices
4 slices of sourdough bread, toasted
Handful of spinach
Directions:
Combine The Bee’s Knees peanut butter, apple juice, water, and salt. Whisk together. In a medium bowl, combine jicama and apple. Pour half of peanut butter dressing over top, stir to combine. To assemble your sandwich, start with a slice of sourdough, coat with peanut butter dressing. Top with spinach, chicken breast, slaw, and bread.
Note: you will most likely have some slaw left over, enjoy it on the side!
