Simply Smooth, Kale, and Apple Sandwich
This vegetarian sandwich is made with fresh veggies, crisp apple slices, a nice thick layer of Peanut Butter & Co. Simply Smooth, and salty feta cheese. While they seem an unlikely pair, PB & feta are a match made in sandwich heaven.

Ingredients
Two pieces of your favorite bread (we used whole wheat sandwich bread)
2 tablespoons Peanut Butter & Co. Simply Smooth
Kale, stems removed
1/8 cup red cabbage, shredded
1 medium-size apple, thinly sliced
1/8 cup crumbled feta cheese
Directions
Spread Peanut Butter & Co. Simply Smooth onto one side of both pieces of bread.
Place a layer of kale on top of Simply Smooth on one piece of bread, then sprinkle crumbled feta on top of kale.
Place pieces of shredded cabbage on top of feta.
Lay thinly sliced pieces of apple on top of feta.
Place the second piece of bread, spread side down, on top of the sliced apples to finish. Slice in half to serve.
Tip: Brush apple slices with a small amount of lemon juice (or sprinkle with a small among of ascorbic acid, commonly used for canning) to keep them from browning in your lunchbox!
