Peanut Butter Coconut Energy Balls
These peanut butter coconut energy balls are super quick and easy to make. Just throw all of the ingredients into a food processor, blend, roll into balls and enjoy! They are the perfect healthy on-the-go snack to grab when you are in a hurry. Thanks to the superfoods chia seeds and flaxseed, these are super healthy and delicious. The combination of coconut and peanut butter is perfect together.

Ingredients
1 cup old fashioned oats
1/2 cup Peanut Butter & Co. Flax & Chia peanut powder
3/4 cup shredded coconut, unsweetened (plus more for coating)
1/4 cup whole flaxseed
2 tbsp chia seed
6 tbsp maple syrup
1/4 cup almond milk
1/2 tsp vanilla extract (optional)
Directions
Add oats, powdered peanut butter, shredded coconut, flax seed, and chia seed to a food processor. Blend until oats are ground up.
Add maple syrup and almond milk. Blend again until all ingredients are well combined.
Roll dough into 1-inch balls. It should make about 18 of them.
Fill a small bowl with shredded coconut. Roll each of the balls in coconut to coat the outside.
