Peanut Butter Coconut Energy Balls

1 cup (80g) old fashioned oats
1/2 cup Peanut Butter & Co. Flax & Chia peanut powder
3/4 cup shredded coconut, unsweetened (plus more for coating)
1/4 cup whole flaxseed
2 tbsp. chia seed
6 tbsp. maple syrup
1/4 cup almond milk
1/2 tsp. vanilla extract (optional)
1. Add oats, powdered peanut butter, shredded coconut, flax seed, and chia seed to a food processor. Blend until oats are ground up.
2. Add maple syrup and almond milk. Blend again until all ingredients are well combined.
3. Roll dough into 1-inch balls. It should make about 18 of them.
4. Fill a small bowl with shredded coconut. Roll each of the balls in coconut to coat the outside.
