Peanut Butter and Jelly Baked Yogurt Parfait

Ingredients

2 eggs

1 1/4 cup  Stonyfield organic 0% fat Pomegranate Berry yogurt 

1/2 cup oat flour* 

1 cup berries of choice 

1/4 cup Peanut Butter & Co. Old Fashioned Smooth 

1/2 cup granola

*If you can’t find oat flour, you can simply grind 1/2 cup of oats in a food processor or blender! 

Directions

  1. Preheat your oven to 350°F. Beat eggs with mixer or whisk for 2-3 minutes. Fold in yogurt with the beaten eggs. Mix 1/2 cup oat flour with egg and yogurt mixture. Pour batter in to a greased pie pan. Add berries.  

  2. Bake at 325°F for 25-30 minutes. Meanwhile, melt 1/4 cup Peanut Butter & Co. Old Fashioned Smooth in the microwave for 30 seconds. Add granola to the melted Peanut Butter & Co. Old Fashioned Smooth and mix until the granola is completely coated with Peanut Butter & Co. Old Fashioned Smooth. Spread Peanut Butter & Co. Old Fashioned Smooth and granola mixture on top of finished baked yogurt pie. 

  3. Serve at room temperature or chilled. Store leftovers in the refrigerator.
