Movie Night Cookies
These cookies are the perfect salty and sweet treat! Stuffed with a yummy PB filling and topped with classic movie night snacks, popcorn and nonpareil candies, these cookies will make the perfect companion for a night in watching your favorite flicks.

Hand mixer or stand mixer
For the filling
1/2 cup powdered sugar
For the cookies
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1 1/2 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp kosher salt
For the toppings
Preheat oven to 375° and line two large baking sheets with parchment paper.
In a medium bowl combine 1 cup Peanut Butter & Co. Simply Smooth and powdered sugar and mix until smooth. Scoop into small balls (about 1 1/2") and freeze.
In a large bowl, or the bowl of a stand mixer, combine 1/2 cup Peanut Butter & Co. Simply Smooth, butter, and sugars and beat on medium until the mixture is light and fluffy. Add egg and vanilla and mix until thoroughly combined. Add flour, baking soda, and salt and mix until just combined.
Scoop a tablespoon of cookie dough and flatten into a circle. Place the frozen
ball of Peanut Butter & Co. Simply Smooth on top. Fold the edges of the dough around the ball and pinch the edges together to seal, adding more dough if necessary to cover the frozen PB ball completely.
Repeat until all dough is used, spacing the cookies about 2” apart.
Bake until the cookies are golden on the bottom,12 to 15 minutes.
Immediately upon removing from the oven, lightly push popcorn and nonpareil candies into the top of each cookie.
Serve while still warm for the most ooey-gooey center!
