Maple Peanut Butter Granola
Homemade granola is so much tastier than store-bought. And homemade granola with maple peanut butter? What could be better! My favorite way to eat this is on top of plain yogurt with fresh berries, but it’s also fantastic blended into smoothies, on ice cream for dessert, and mixed into pancake batter.

Ingredients
1/2 cup Peanut Butter & Co. Mighty Maple
1/3 cup maple syrup
1/3 cup honey
2 tbsp. water
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla extract
4 cups rolled oats
1 cup shredded coconut
1 cup sliced almonds (or any nut you like)
2 cups crisp rice cereal
2 cups dried fruit (raisins, cranberries, cherries, etc)
Directions
Preheat oven to 325°F. In a large bowl, whisk together the first 7 ingredients until smooth. Add the oats, coconut, almonds, and rice cereal and gently toss until all ingredients are coated.
Spread mixture out on a large baking sheet and bake for about 25 minutes. Stir, then turn the heat down to 300°F and return granola to oven for another 10-15 minutes or until golden brown. Stir in the dried fruit. Let cool to room temperature before storing in an airtight container.
Cook Notes
May be stored up to 2 weeks in the pantry or up to 6 months in the freezer. Serve with yogurt and fresh fruit, or however you like it!
