Maple Peanut Butter Granola

Yield: 10 cups
Ingredients
1/2 cup Mighty Maple peanut butter
1/3 cup maple syrup
1/3 cup honey
2 tablespoons water
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
4 cups rolled oats
1 cup shredded coconut
1 cup sliced almonds (or any nut you like)
2 cups crisp rice cereal
2 cups dried fruit (raisins, cranberries, cherries, etc)
Procedure
1. Preheat oven to 325°F. In a large bowl, whisk together the first 7 ingredients until smooth. Add the oats, coconut, almonds, and rice cereal and gently toss until all ingredients are coated.
2. Spread mixture out on a large baking sheet and bake for about 25 minutes. Stir, then turn the heat down to 300°F and return granola to oven for another 10-15 minutes or until golden brown. Stir in the dried fruit. Let cool to room temperature before storing in an airtight container.
*May be stored up to 2 weeks in the pantry or up to 6 months in the freezer. Serve with yogurt and fresh fruit, or however you like it!
