Make-Ahead Peanut Butter Banana Oatmeal

Peanut Butter Banana Oatmeal

You'll Need:

3 cups milk (or substitute almond milk for a vegan version)
2 very ripe bananas, mashed
1/4 teaspoon salt
1 cup steel-cut oats
1/4 cup Peanut Butter & Co. Cinnamon Raisin Swirl

Directions: In a large saucepan set over medium-high heat, whisk together the milk, mashed banana, and salt, and bring to a boil.

Stir in the oats, then turn down the heat to low and simmer for 20 minutes, stirring occasionally, until the oats are soft and have absorbed almost all of the liquid. Remove from heat and stir in the Peanut Butter & Co. Cinnamon Raisin Swirl.

Spoon the hot oatmeal into five 1-cup mason jars (or any other microwave-safe container with a tight-fitting lid), and set aside to cool, uncovered. Once the jars are completely cooled, seal them up with lids and transfer to the refrigerator until ready to use. 
To serve, simply microwave the uncovered jars for 1-2 minutes on high or until warmed through. If you so desire, feel free to garnish with sliced bananas, a swirl of honey and/or a splash of fresh cream, then dig in!
