Hot Cocoa Cookies
¼ cup cocoa powder
½ cup Peanut Butter & Co. Peanut Powder - Cocoa
1 cup (2 sticks) butter softened
1 cup granulated sugar
1/2 cup packed light brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Directions: Heat oven to 350° F. Line cookie sheets with parchment paper.
Beat butter, granulated sugar, and brown sugar in large mixer bowl. Add eggs and vanilla and beat until well blended. In a separate bowl, stir together flour, cocoa, Peanut Butter & Co. Peanut Powder - Cocoa, baking soda, and salt. Gradually add to butter mixture and beat until blended. Stir in chocolate chips. Chill dough in freezer 10 minutes.
Roll dough into 1-inch balls. Place on prepared cookie sheets; flatten slightly. Bake 7 to 8 minutes. Lightly press 2-3 mini marshmallows on top of each cookie. Continue baking an additional 1 to 2 minutes. Remove from oven and allow cookies to cool completely on cookie sheet before removing to wire rack.
