Grilled Peanut Butter Rainbow Sandwich
I’m sure I go through the same lunch ruts as most people. There are only so many sandwich and salad combinations you can make! But this sandwich stays in my rotation and can change with the seasons. The mix of Peanut Butter & Co. Crunch Time and fresh berries covers up the flavor of the carrots and lettuce, but you still get in some vegetables. Not bad for a workday lunch!

8 slices of bread
3 carrots, peeled and sliced into thin pieces with a vegetable peeler
1 cup fresh lettuce or spinach
1 cup fresh raspberries
4 tbsp. (1/4 cup) butter
Place a medium skillet over medium-high heat.
Spread 2 tablespoons Peanut Butter & Co. Crunch Time on one side of each piece of your bread.
Top 4 slices of the bread with thin slices of carrot, lettuce, and fresh raspberries. Top each sandwich with another piece of bread.
Butter the outsides of the sandwich and cook in the pan, 3-4 minutes, on each side until the bread is golden and the peanut butter is starting to melt.
Slice the sandwich in half and serve warm.
