Double Peanut Butter Sandwich Cookies

Ingredients
Peanut Butter Cookies
1/2 cup oat flour
1/2 cup Peanut Butter & Co. Vanilla Peanut Powder
1 tbsp. granulated stevia/preferred sweetener
1/2 tsp. cinnamon (optional)
1/8 tsp. salt
1/2 cup Peanut Butter & Co. Smooth Operator
1 tbsp. milk (any milk is fine)
Peanut Butter Cream Filling
1/2 cup Peanut Butter & Co. Vanilla Peanut Powder
1/2 cup plain Greek yogurt
2 tbsp. granulated stevia/preferred sweetener (more for a little bit sweeter filling)
1 tbsp. milk (any milk is fine)
Directions
Preheat oven to 325°F. Mix oat flour, peanut flour, stevia, and salt in a bowl.
In a separate bowl, add peanut butter, brown rice syrup, and milk. Heat in the microwave for about 15 seconds to soften peanut butter. Mix with a fork until smooth.
Add wet ingredients to dry. Mix together until a thick cookie dough forms. You can use your hands if necessary. Roll dough into a ball. Place dough between two sheets of wax paper. Roll out until about 1/2 inch thick.
Use cookie cutter to cut out round cookies about 1 1/1 inches in diameter. Keep rolling dough and cutting cookies until it runs out. It should make about 14 cookies.
Place cookies on a baking sheet prepared with nonstick spray. Bake for about 8 minutes. Let completely cool.
Mix all peanut butter cream filling ingredients. It should make a thick filling. Place about 1 1/2 tbsp. of filling into the middle 7 of the cookies. Gently press another cookie on top of each.
Put remaining peanut butter filling in a small plastic bag. Cut a small hole on the end and pipe filling in a criss-cross on top of each sandwich cookie. Enjoy!
