Cold Brew and Dark Chocolatey Dreams Cookies
Ice cream scoop
8 oz chopped bittersweet chocolate
1 3/4 cup + 2 tbsp all-purpose flour
1/2 cup unsweetened cocoa powder
1.5 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup unsalted butter
1.5 cups cane sugar
2 cups semi-sweet chocolate chunks
Preheat oven to 350˚F. Line a baking sheet with parchment paper and set aside.
In a bowl, microwave the bittersweet chocolate to melt it, only a few seconds at a time and stirring in between until the chocolate is fully melted. Set aside.
In a medium bowl, combine flour, cocoa powder, baking soda, baking powder, salt.
In a stand mixer, beat together butter and sugar, then add eggs one at a time. Add the melted bittersweet chocolate.
Stir in dry ingredients, followed by the cold brew mixture. Fold in the semi-sweet chocolate chunks.
Use ice cream scoop or spoon, form 2" balls of cookie dough Bake on a parchment lined pan for 14 minutes.
