Cold Brew and Dark Chocolatey Dreams Cookies

Supplies

Stand mixer

Ice cream scoop

Ingredients

8 oz chopped bittersweet chocolate 

1 3/4 cup + 2 tbsp all-purpose flour

1/2 cup unsweetened cocoa powder

1.5 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup unsalted butter

1.5 cups cane sugar 

2 eggs

4 tbsp Wandering Bear Straight Black Cold Brew

6 tbsp Peanut Butter & Co. Dark Chocolatey Dreams  

2 cups semi-sweet chocolate chunks

Directions

  1. Preheat oven to 350˚F. Line a baking sheet with parchment paper and set aside.

  2. In a bowl, microwave the bittersweet chocolate to melt it, only a few seconds at a time and stirring in between until the chocolate is fully melted. Set aside.

  3. In a medium bowl, combine flour, cocoa powder, baking soda, baking powder, salt. 

  4. In another medium bowl, mix Wandering Bear Straight Black Cold Brew and Peanut Butter & Co. Dark Chocolatey Dreams until smooth, set aside. 

  5. In a stand mixer, beat together butter and sugar, then add eggs one at a time. Add the melted bittersweet chocolate. 

  6. Stir in dry ingredients, followed by the cold brew mixture. Fold in the semi-sweet chocolate chunks.

  7. Use ice cream scoop or spoon, form 2" balls of cookie dough Bake on a parchment lined pan for 14 minutes.
