Ingredients
For the cake:
2 cup all-purpose flour
2 cup granulated sugar
1/2 cup Peanut Butter & Co. Cocoa Peanut Powder
1 tsp baking powder
1/4 tsp salt
3/4 cup buttermilk
1 tsp vanilla extract
2 large eggs
1 cup unsalted butter
1/4 cup unsweetened cocoa powder
1 cup water
For the frosting:
1 3/4 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/2 cup milk
1 tsp vanilla extract
4 cup powdered sugar
1/4 cup Peanut Butter & Co. Cocoa Peanut Powder
1/4 tsp salt
1/2 cup chopped peanuts (optional)
Directions
Preheat oven to 350°F. Grease a 17 x 11 x 1-inch sheet pan with non-stick cooking spray. (Similarly sized sheet pans may also be used).
In a large bowl combine the flour, sugar, powdered peanut butter, baking soda and salt. In another bowl whisk together the buttermilk, vanilla and eggs.
In a medium saucepan set over medium heat, melt the butter. Add the cocoa and water and bring to a boil, stirring frequently until mixture is smooth. Remove from heat and pour into the flour mixture, whisking until combined. Add the buttermilk mixture and whisk until smooth.
Pour batter into the prepared sheet pan. Bake for approximately 20 minutes, or until the cake is springy to the touch.
While the cake is baking, prepare the frosting. In a medium saucepan set over medium heat, melt the butter. Add the cocoa and mix until smooth. Remove from heat. Whisk in the milk and vanilla extract, followed by the powdered sugar, powdered peanut butter and salt. Whisk until frosting is smooth. Stir in the chopped peanuts, if using.
Immediately pour the frosting over the warm cake. Let sit for at least 30 minutes before serving.
