Chocolate Peanut Butter Banana Bread

Ingredients
1 cup all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 tsp. salt
1 cup Peanut Butter & Co Simply Smooth peanut butter spread
2/3 cup sugar
1 cup very ripe bananas, mashed
1/2 cup canola or other light vegetable oil
2 large eggs
1 teaspoon vanilla
1 banana, sliced lengthwise in thirds
Directions
Preheat oven to 350°F. Line a 1 LB loaf pan (8" x 4" x 3") with parchment paper and set aside.
In a large bowl combine the flour, cocoa powder, baking soda, and salt. Stir with a fork to break up any clumps and set aside.
Place 2/3 cup of peanut butter, sugar, mashed bananas, vegetable oil, eggs, and vanilla in a large bowl and mix until well combined. Add the dry ingredients and mix until just combined. Be careful not to overmix.
Pour batter into prepared loaf pan and top with banana slices. Bake for 50-60 minutes, or until a cake tester comes out clean. Cool loaf on a wire rack for at least 20 minutes before proceeding to next step.
Place the remaining 1/3 cup of peanut butter in a microwave-safe bowl and heat it in a microwave for 20 seconds. Stir the melted peanut butter to ensure it's pourable and heat for an additional 10-20 seconds if necessary. Drizzle melted peanut butter over loaf and allow to cool an additional 15 minutes before serving. Store in an airtight container for up to 3 days.
