Chocolate Almond Butter Cups

Dessert doesn’t have to be a splurge to be satisfyingly delicious, and these Bestie chocolate nut butter cups are proof! Insanely easy to make with no cooking required, these nut butter cups combine dark chocolate, Bestie Almond & Cashew butter, honey, crushed almonds and cashews, and sea salt into a perfectly portioned treat you can take on the go! Simple, fuss-free, and perfect for healthy families who love smart sweets. Store them in the freezer or fridge for long-lasting enjoyment.

  • Total Time:40 minutes + 4-6 hours to freeze

Ingredients

1 lb dark chocolate chips or chunks 

2 tbsp canola or vegetable oil 

3/4 cup Peanut Butter & Co. Almond Butter

2 tsp honey (or more if you like it sweeter!) 

3 tbsp crushed almonds 

3 tbsp crushed cashews 

sea salt to top 

cupcake liners for freezing 

Directions

  1.  Line cupcake pan with liners.

  2. In large mixing bowl combine the chocolate chips/chunks and oil, then melt in the microwave for approximately 1 minute, stirring every 20 seconds. Place a heaping tablespoon of melted chocolate into each liner, swirling it around so that it brushes up along the edges. Freeze for 20 minutes once all liners are filled.

  3. When ready, soften the Peanut Butter & Co. Almond Butter in the microwave for 10-15 seconds, then stir in the honey. Dollop a heaping tablespoon of nut butter into each frozen chocolate shell, then sprinkle with crushed almonds and cashews. Lastly top each cup with remaining chocolate, then sprinkle with a dash of sea salt. Freeze for 4-6 hours, then eat!
