Triple Layer Peanut Butter Popsicles

These Triple Layer Peanut Butter Popsicles are the perfect treat to make ahead for hot summer days. You'll need a popsicle mold (we used a silicone one that you fill from the top) and some popsicle sticks, but otherwise, this low-effort recipe is the gift that keeps on giving!

Popsicle mold that can be filled from the top

Popsicle sticks

Ingredients

1/2 cup Peanut Butter & Co. Smooth Operator

1/2 cup Peanut Butter & Co. Dark Chocolatey Dreams

1 tbsp cocoa powder

1/2 cup plain or vanilla Greek yogurt, divided

Approximately 1 pint fresh raspberries



Directions

  1. Empty raspberries into a small bowl and smash with a fork until the berries resemble a jam, set aside.

  2. In a small bowl, combine 1/4 cup of Greek yogurt and Peanut Butter & Co. Smooth Operator, set aside.

  3. In a small bowl, combine the remaining 1/4 cup of Greek yogurt, Peanut Butter & Co. Dark Chocolatey Dreams, and cocoa powder.

  4. Pour the smashed raspberries into the popsicle mold, filling each cavity 1/3 of the way. Freeze for one hour.

  5. Remove the popsicle mold from the freezer. Pour equal amounts of the Smooth Operator and Greek yogurt mixture into the popsicle mold, on top of the smashed raspberries, filling each cavity so that 1/3 of the space still remains. Freeze for one hour. 

  6. Remove the popsicle mold from the freezer. Pour equal amounts of the Dark Chocolatey Dreams, cocoa, and Greek yogurt mixture into the popsicle mold, on top of the Smooth Operator mixture, filling each cavity. Place a stick into each cavity of the popsicle mold.

  7. Freeze for 1-2 hours or overnight for best results. Enjoy!
