Strawberry Frozen Yogurt Peanut Butter Cups

4 ounces coconut oil
1 teaspoon vanilla extract
1/4 teaspoon salt
16 ounces strawberry yogurt
Pink candy sprinkles
Melt the coconut oil by placing it in a small bowl and warming it in the microwave 15 seconds at a time until fully melted, stirring in between. The yield should be 1/2 cup melted oil.
In a small bowl, mix together the melted coconut oil, peanut butter, vanilla extract, and salt.
Spoon 1 teaspoon of the peanut butter mixture into each cavity in the candy mold. Place in freezer for 30 minutes to set.
Spoon 1 teaspoon of strawberry yogurt on top of each peanut butter layer. Place in freezer for 10 minutes.
Top each cup with pink candy sprinkles and gently press into yogurt. Return to freezer for 45 minutes or until set.
Serve straight from the freezer. Store frozen for up to one week in an airtight container.
