Peanut Butter Veggie Wrap

This wrap is the perfect choice for vegans, vegetarians, and omnivores alike. This wrap brings the crunch; Peanut Butter & Co. Simply Crunchy packed with peanut pieces, carrots, cabbage, and fresh red bell pepper. Adding Simply Crunchy to this plant based wrap makes eating veggies more fun!

Ingredients

Parchment paper, cut into one sheet
Large tortilla wrap
2 tablespoons Peanut Butter & Co. Simply Crunchy
A few pieces of leafy greens, chopped
1 carrot, shredded
1 red bell pepper, sliced
1/8 cup red cabbage, shredded 
1/8 cup edamame, shelled

Directions

  1. Place large tortilla wrap on top of parchment paper. Spread two tablespoons of Peanut Butter & Co. Simply Crunchy on a large tortilla wrap.

  2. Place chopped leafy greens, shredded carrot, sliced red pepper, shredded cabbage red cabbage, and edamame on top of Simply Crunchy.  

  3. Using the parchment paper, roll the tortilla closed. The Simply Crunchy should act as the glue to keep the wrap closed tight!

  4. We decided to cut it into four pieces so that it would fit perfectly into a lunchbox. Wrap can be enjoyed immediately, or refrigerated and served the next day.
