Peanut Butter Swirl Toffee
1 cup sugar
1 cup butter
2 tbsp water
1 tsp salt
1/2 cup Peanut Butter & Co. Simply Smooth
1 cups chocolate chips
Please note that you will need a candy thermometer for this recipe.
Grease a baking sheet and set aside. Add butter, sugar, water, and salt into a medium saucepan. Heat over medium heat, stirring frequently, until the butter is melted and the sugar has dissolved. Monitor heat with a candy thermometer, and continue to heat until temperature reaches 300°F. The mixture should be a rich, caramel color.
Remove from heat. Pour toffee mixture onto the prepared baking sheet, and allow to spread. Top the toffee with chocolate chips and allow to sit for 5 minutes, allowing chocolate chips to melt.
In a small, microwave-safe bowl heat Peanut Butter & Co. Simply Smooth in 5-10 second increments until it is melted just enough to pour.
Spread melted chocolate chips over the surface of the toffee. Drizzle the melty Simply Smooth on top. Allow the toffee to cool completely before cutting and serving.
