Peanut Butter Pretzel Truffles

Does anyone else remember those peanut butter stuffed pretzels you’d always get as a kid? Well picture that completely covered in rich dark chocolate and that basically sums up these truffles! They’re only 5 ingredients (one being Peanut Butter & Co.’s Bee’s Knees Peanut Butter), are so easy to make AND are the perfect combination of salty and sweet! Trust me loves, your friends and family will think these are the bee’s knees at your next cookie exchange! 😉

  • Yield:18-20 truffles
  • Prep Time:15 minutes
  • Cook Time:30 minutes to set
  • Total Time:45 minutes

Ingredients

1 cup Peanut Butter & Co. The Bee's Knees
½ cup crushed pretzels
¼ cup maple syrup
1½ cups chocolate chips (dark, milk or semi-sweet) 1 tsp coconut oil

Directions

  1. In a large bowl mix together your Peanut Butter & Co. The Bee's Knees, maple syrup and crushed pretzels until a sticky dough has formed. Scoop the dough into 1 tablespoon amounts and form them into balls. Place the balls on a tray that's been lined with parchment paper and place the tray in the freezer for at least 10 minutes.

  2. Next, place the chocolate chips and coconut oil in a microwave safe bowl and heat them in the microwave at 30 second intervals until the chocolate has completely melted. (Make sure to stir in between each interval. Mine took about 1½ minutes.)

  3. Once the chocolate is melted, remove the truffles from the freezer and dip them one by one into your melted chocolate. Use a small spoon to remove them and drain off any excess chocolate. Transfer your truffles back to the tray lined with parchment paper and sprinkle them with extra crushed pretzel pieces. Place the tray back in the fridge until the chocolate is set. Serve immediately!
