Peanut Butter Oatmeal Lace Cookies

Ingredients
2 cups old fashioned oats
3 tbsp. all-purpose flour
1 tsp. salt
1 cup unsalted butter
2 cups brown sugar, packed
1 cup Peanut Butter & Co. Old Fashioned Smooth
1 tsp. vanilla
1 large egg, beaten
Directions
In a large mixing bowl, stir together the oats, flour, and salt and set aside.
Preheat your oven to 375 F degrees.
Line a cookie sheet with parchment paper.
Brown the butter by heating it in a small saucepan on medium heat until it turns a dark golden color and has a nutty aroma.
Remove from heat and allow to cool for a few minutes until lukewarm or cooler.
Combine the sugar, Peanut Butter & Co. Old Fashioned Smooth, egg, and vanilla in a mixing bowl and stir until well combined. Add the oat mixture and browned butter and mix until well combined.
Use two spoons or a small cookie scoop to drop 3/4-inch balls of dough on the prepared cookie sheet, leaving at least 3 inches between cookies to account for how the cookies will spread during baking.
Bake for 5-7 minutes, or until golden brown. Allow to cool completely before serving, or store in an airtight container for up to 2 weeks.
