When Lee was researching sandwiches for the Peanut Butter & Co. menu, he came across a number of recipes from the 1950s that combined peanut butter & chopped bacon to make a savory sandwich spread. The idea of combining peanut butter and bacon was intriguing, but after testing it out on some friends, Lee realized that he needed to jazz the sandwich up a bit. He used whole slices of bacon, added lettuce and tomato, and decided to toast the bread. His new creation got rave reviews from friends, but in retrospect he realized he had basically recreated a BLT sandwich with peanut butter subbed for mayo! Sometimes you have to go backward to go forward. This sandwich is great with a glass of iced tea or cool lemonade.
