Peanut Butter & Co. Sandwich Shop: The PBLT
When Lee was researching sandwiches for the Peanut Butter & Co. menu, he came across a number of recipes from the 1950s that combined peanut butter & chopped bacon to make a savory sandwich spread. The idea of combining peanut butter and bacon was intriguing, but after testing it out on some friends, Lee realized that he needed to jazz the sandwich up a bit. He used whole slices of bacon, added lettuce and tomato, and decided to toast the bread. His new creation got rave reviews from friends, but in retrospect, he realized he had basically recreated a BLT sandwich with peanut butter subbed for mayo! Sometimes you have to go backward to go forward. This sandwich is great with a glass of iced tea or cool lemonade.

Ingredients
2 tbsp Crunch Time or Smooth Operator peanut butter
4 strips bacon, cooked & crispy
2-3 pieces green leaf lettuce, washed and trimmed
2-3 slices ripe tomato
2 slices white bread
Directions
Toast the bread and immediately spread the Peanut Butter & Co. Crunch Time or Peanut Butter & Co. Smooth Operator on one side of each slice
Layer the bacon, lettuce, and tomato atop the peanut butter on one slice of bread, and then top with the other slice, peanut butter side down.
Insert two toothpicks, each about 2 inches from opposite corners of the sandwich, and slice in half diagonally.
