No-Bake White and Dark Chocolate Raspberry Peanut Butter Bars
These bars were inspired by my mother, Mary, who is crazy about anything with raspberry and chocolate. Growing up in Kearney, Nebraska she had her own raspberry bush and my fondest memories of spring were plucking berries right off the bush. Nothing goes better with raspberries and peanut butter than chocolate, so here I’ve used both Peanut Butter & Co.’s Dark Chocolatey Dreams and White Chocolatey Wonderful. A little sinful and decadent, these no bake bars are to-die-for.

Ingredients
2 cup chocolate graham cracker crumbs
2 cup confectioner’s sugar
1 cup melted unsalted butter
1 cup Peanut Butter & Co.’s Dark Chocolatey Dreams
2 (3.5 oz) bars white chocolate, chopped
4 tbps Peanut Butter & Co.’s White Chocolatey Wonderful
1/2 cup raspberry preserves
1 pint fresh raspberries
Directions
Line a 9-inch by 13-inch baking pan with parchment paper.
In a mixing bowl, combine graham cracker crumbs, melted butter, confectioner’s sugar and Peanut Butter & Co. Dark Chocolatey Dreams. Combine until well mixed. Press into baking tray
In a small bowl, add chopped white chocolate and Peanut Butter & Co. White Chocolatey Wonderful. Microwave on 50 percent power in 20-30 second intervals, stirring each time until chocolate is completely melted and mixture is smooth (about 2-3 minutes total). Spread over graham cracker layer.
Dollop with raspberry preservers and and spread or swirl into chocolate. Top with fresh raspberries.
Chill in the refrigerator at least an hour or until bars are completely firm.
Cut into squares and serve immediately.
