Easy Vegan Peanut Dipping Sauce

1/2 cup Smooth Operator peanut butter spread
1/2 cup coconut milk
1/4 cup chopped dry roasted peanuts (optional)
1 tbsp rice vinegar
1 tbsp soy sauce
2 tbsp palm sugar or brown sugar
1/4 tsp cayenne pepper
- Place all ingredients in small saucepan over a low flame and stir or whisk together until smooth
- Taste to adjust seasoning to your preference, adding extra sugar for more sweetness, more soy sauce for more saltiness, more vinegar or lime juice to make the sauce more sour, and more cayenne pepper to make the sauce more spicy.
- Adjust the sauce for consistency, adding water or additional coconut milk by the teaspoon to thin it out, or adding peanut butter for additional thickness.
- Serve finished sauce warm or at room temperature Garnish with chopped peanuts if desired. Sauce will keep for 5-7 days if kept refrigerated in a sealed container.
