Coconut Peanut Butter Chocolate Chip Oatmeal

Ingredients

Oatmeal 

3/4 cup oats (old fashioned or quick) 

1 1/2 cup water 

2 egg whites 

1 tbsp Peanut Butter & Co. Flax & Chia peanut powder 

1/8 tsp salt 

1/4 tsp coconut extract 

cinnamon and sweetener to taste


For the frosting 

1 1/2 tbsp Peanut Butter & Co. Flax & Chia peanut powder 

1 tbsp water 

sweetener to taste 

1 tbsp shredded coconut 

1/2 tbsp dark chocolate chips 

Directions

  1. Add water to a small pot. Bring to a boil, then add oats. Reduce to medium heat and let simmer for about 5-6 minutes. 

  2. While still on medium heats, add egg whites and whisk into the oatmeal. Make sure to continually whisk well or you will have scrambled egg whites in your oatmeal! 

  3. Remove from heat. Add powdered peanut butter, salt, coconut extract, cinnamon and sweetener to taste. 

  4. Now, make peanut butter sauce. In a small bowl, add powdered peanut butter, water, and sweetener to taste.

  5. Put peanut butter sauce in a small plastic bag and cut the end off. Pipe peanut butter over top of the oatmeal. Top with chocolate chips and shredded coconut.
