Autumn Apple Oatmeal Bowl

Autumn Oatmeal Bowl

You'll Need:
1 cup old fashioned oats
1/2 cup water, milk, or plant-based milk
2 tbsp maple syrup (optional)
2 tbsp Peanut Butter & Co. Simply Smooth
1 small or medium-sized apple, cut into chunks
1 tbsp coconut oil
1 tbsp water
1/4 tsp cinnamon
1/8 cup pecans
1-2 tbsp dried blueberries, dried cranberries, or raisins


Directions:
Place chunks of apple into a skillet with 1 tablespoon of water. Cover pan and cook apples, stirring occasionally, over medium heat for about 5 minutes or until apples have absorbed the water and softened. Add coconut oil to the skill and stir apples until fully coated. Continue to cook apples uncovered for another 5 minutes or until apples have achieved preferred softness. Remove from heat and put aside.

In a medium saucepan over high heat, bring water or milk to a boil. Stir in oats and cinnamon, reduce heat to low, and simmer until oats are tender and creamy, about 3-5 minutes. Optionally, stir in maple syrup before removing from heat. 

Transfer oatmeal to a cereal bowl and add cooked apples. Top with Peanut Butter & Co. Simply Smooth, pecans, and dried fruit. Enjoy while hot!
