VIDEO RECIPE: Baked Sweet Potato Fries with Spicy Mayonnaise Peanut Butter Sauce

Yield: 4-6 servings
For the sweet potatoes
4 large sweet potatoes
For the dip
1 1/2 cups buttermilk
1/2 cup mayonnaise
2 tablespoons The Heat is On peanut butter (more if you want it spicier)
1/2 teaspoon kosher salt
1. Preheat oven to 400°F. Cut potatoes into 3” long and 1/2” wide sticks (do not peel).
2. Toss potatoes with grapeseed oil until well coated, and season with salt. Spread evenly onto 2 baking sheets and roast for 20-30 minutes, turning halfway through until crisp and golden on all sides.
3. Prepare the dip by pureeing the buttermilk, mayonnaise, peanut butter, and salt until smooth. Serve with hot sweet potato fries.
