Pumpkin Spice Peanut Butter Latte Cupcakes

You'll Need:

For the cupcakes
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
5 1/3 tablespoons (1/3 cup) unsalted butter, softened
1/2 cup plus 1 tablespoon Peanut Butter & Co. Pumpkin Spice
1-1/4 cups packed brown sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup 2% milk

For the frosting
1 stick (1/2 cup) unsalted butter, softened
1 package (8 ounces) cream cheese, softened
4-6 cups confectioners’ sugar
1 teaspoon vanilla extract
Milk or cream, to thin

Optional garnish
Caramel sauce, sprinkles, and straws, cut into approximately 2-inch cylinders

Directions: Preheat the oven to 350°F. Line two standard (12-cup) cupcake tins with nine liners each.

In a large bowl, sift together the first five ingredients. Set to the side.

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, Peanut Butter & Co. Pumpkin Spice, and brown sugar on medium-high speed until light and fluffy.

Pause mixing and add the egg and vanilla. Mix briefly to combine, and scrape down the sides of the bowl with a rubber spatula if needed.

Add the dry ingredients to the creamed mixture alternately with the milk, beating well after each addition. 

Fill the cupcake liners about 2/3 full with batter. 

Bake in the preheated oven for 18-22 minutes, rotating at the 10 minute mark, or until a toothpick or cake tester inserted near the center comes out mostly clean. Remove the cupcakes from the oven, and let cool in the pans for about 5 minutes before transferring to wire racks to cool completely.

Make the frosting. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and cream cheese on high speed until very fluffy and totally lump-free.

Pause mixing, and add 3 cups of the confectioners’ sugar, and the vanilla. Continue mixing, on low speed at first, then increasing the speed to medium-high as the sugar is absorbed. Once the sugar is all absorbed, pause mixing again and add the remaining sugar, one cup at a time, mixing with each addition, until the frosting has reached your desired consistency.

Ice each cupcake by piping it on top of the cakes or icing by hand. If desired, garnish with a dollop of caramel sauce, sprinkles, and/or mini portions of straw so that they resemble a latte!
