Peanut Butter Guacamole Gazpacho

Ingredients
2 cups 1/4 inch diced tomatoes
2 ripe avocados, peeled, cored and diced
1/2 cup Crunch Time peanut butter
1 cup Peanut Butter & Co. Golden Roasted Peanuts
2 scallions, finely chopped
3 tablespoons fresh lime juice
2 tablespoons fresh mint
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions
1. In a medium sized mixing bowl, combine tomatoes, avocado, peanut butter, scallions, peanuts, lime juice, fresh mint, sea salt and pepper; gently toss to combine.
2. Transfer to a serving bowl; serve with crudités or crackers.
