Ingredients

3 medium carrots, thinly sliced with a vegetable peeler (3 cups)
1/2 medium red onion, thinly sliced
1/2 cup rice vinegar
2 teaspoons sugar
Kosher salt and ground pepper
2 loaves Italian or Cuban bread, partially split
1 tablespoon fish sauce
2 tablespoons soy sauce
3 tablespoons lime juice
1/2 cup The Heat Is On peanut butter
1 cup cilantro leaves
1 pound thinly sliced roast beef

Procedure

1. In a medium bowl, toss to combine first 4 ingredients; season well with salt and pepper. Set aside to marinate 30 minutes. Meanwhile, leaving a 1-inch border, remove soft insides of bread and discard.

2. In a small bowl, stir together fish sauce, soy sauce, lime juice, and peanut butter.

3. Spread inside of bread halves with mixture. Line inside of bread halves with beef; gently squeeze carrot and onion to remove excess liquid. Fill sandwiches with carrots and cilantro. Slice each sandwich in half and serve.
