No-Bake Cookie Dough Bites: Two Ways!

Sometimes you want a quick treat without a lot of hassle. If you’re like me, the more simple the ingredients and easier the recipe the better! These no bake cookie dough bites fit the bill perfectly. Even better is there’s two options for you – both using the same base recipe. Depending on what you’ve got in your pantry and what you’re favorite cookie mix-ins are, the options for these delicious little bites are practically endless. Not only are these cookie dough bites gluten free, but they are also refined sugar free too and can easily be made vegan as well. The perfect recipe to suit multiple dietary restrictions yet still delicious that everyone will love them!

No Bake Maple Walnut Cookie Dough Bites
1 c. packed blanched almond flour
2 tbsp. full fat coconut milk (in the can)
2 tbsp. Peanut Butter & Co. Mighty Maple Peanut Butter
¼ c. chopped walnuts
¼ c. chocolate chips
1 pinch salt
Directions
In a medium-sized mixing bowl, combine almond flour, coconut milk, Peanut Butter & Co. Mighty Maple Peanut Butter, and salt. Mix until well combined. Mix in chocolate chips and chopped walnuts. Shape and roll into 1-inch cookie dough balls using a small scoop. Serve immediately or refrigerate cookie dough bites for up to a week.
No Bake Chocmeister Cookie Dough Bites
1 c. packed blanched almond flour
2 tbsp. full fat coconut milk (in the can)
2 tbsp. Peanut Butter & Co. Chocmeister Milk Chocolatey Hazelnut Spread
¼ c. chocolate chips
1 pinch salt
Directions

In a medium-sized mixing bowl, combine almond flour, coconut milk, Peanut Butter & Co. Chocmeister Milk Chocolatey Hazelnut Spread, and salt. Mix until well combined. Mix in chocolate chips. Shape and roll into 1-inch cookie dough balls using a small scoop. Serve immediately or refrigerate for up to week.
