Maple Peanut Butter Granola Yogurt Cups

Ingredients

1-1/2 cups old fashioned oats 
3/4 cup Peanut Butter & Co Mighty Maple peanut butter spread 
3 tablespoons of honey or agave syrup if making vegan  
2 cups vanilla yogurt, plant-based if making vegan 
3 strawberries, sliced in half, lengthwise 

1/3 cup fresh blueberries 

 

Directions

  1. Preheat your oven to 350°F.

  2. In a large bowl combine the oats with 1/2 cup peanut butter and honey. 

  3. Scoop oat mixture into 6 greased muffin cups, and press the mixture down with the bottom of a small glass or your fingers to form a cup. 

  4. Bake for 12-15 minutes, let cool completelyand then remove from the pan. 

  5. Fill each cup with yogurt and top with berries and a dollop of the reserved peanut butter. Serve immediately.  Will keep refrigerated in a sealed container for 1 day.
